The factory-equivalent table is only to get you started for tuning the ignition timing. Tune it. It's going to be specific for your goals, fuel, etc. It's not a choice of chocolate or vanilla, it's what is correct for your engine and conditions. If you change fueling, you change timing again. They work together and enable the engine to do its job most effectively and efficiently as a team. You'll get there.
