Triumph TR6 to TBI

Hi,
I have a Triumph TR6 that I have always wanted to convert to EFI. While I was researching a certain other DIY EMS, I came across Speeduino, and it looks like it is a good match to what I am interested in. I also like that it is open source, and built on a platform that is easy to work with.
The car has 2 carbs, which I will convert to TBI, using one injector each.
I am planning to use 36-1 trigger wheel on the crank, and VR sensor, for spark output, a coil pack with integrated ignitors in wasted spark mode.
For O2 I am thinking of the https://www.14point7.com/products/slc-free kit.
I also want to control an electric fan via the speeduino as well.
I have yet to decide on the other sensors etc.
So, first, is the speeduino a good choice for this conversion?
Since the car is currently in parts (easy to access stuff) I am planning on adding the various sensors as I put it back together.
Next step would be to get it running again on the carbs, using the speeduino for fan control only. Then use speeduino for ignition control, and finally for fuel as well. Does this approach make sense, or is it better to just go for full EFI control from the get go?
Also, will the O2 controller mentioned above work with the speeduino?
