Hi,
I'm going to put my hands on a "weird" project, a T-Jet swapped Lancia Y 840 with its original gearbox. So I was wandering if there is a way to display on the original dash all the analog data fed to the Speeduino, as the VSS, RPM, AFR and Turbo pressure (these two on an external gauge obviously) etc. Will it work if I connect the signal from the sensor both to Speeduino and the gauge? Do I need double amount of sensors and also keeping the original ECU (Magneti Marelli IAW 16F.EB)?

not sure what T-Jet means nor Y 840.
There is lot of space in your original dash to display anything digital and analog.
Order a TFT display and put it behind the glass (or in front of it when touchscreen). Install display in "portait-orientation" and just cover the temperature-gauge.
Order it larger and cut the plastic and have bottom right corner sticking out through the plastic if you can still install it then?
You can display temperature, boost, pacman and anything else that you want on your TFT.
Try realdash on raspberry?
